Last holiday season, Hwe curated two special holiday bundles with a mix of sweet and savoury pastries for all our market visitors and friends to enjoy during the Christmas holidays.
Hosted by East Coast Commune and also joined by other local makers, Hwe prepared a variety of tea cakes, tarts, scones, cake rolls, choux puff, bread, slow-cooked jam and biscotti for our guests to take home to share with their loved ones ππ Thank you to Shermein & Khim for inviting us to be a part of your market and to all our friends at a summer in hwe who came by to say hi & bring back a box or two! π₯°

Last December, a summer in t.br was invited by Third Space Asia to create an exclusive tasting experience for the launch of the new Asahi Super Dry Nama Jokki. Fueled by creativity, Hwe & Gerald curated a 10-course menu to bring out and complement the flavours of the newΒ Asahi Super Dry Nama Jokki.
Hosted at a summer in t.brβs intimate space, Hwe & Gerald welcomed Asahi and their guests over two sessions – from artists and athletes, to food editors and content creators. Distinctive dishes were uniquely concocted for the media launch as a first-of-its-kind, including Asahi beer-compressed muscat grapes as part of the appetizer, an Asahi beer jelly in the pre-dessert of blood orange sorbet, and an Asahi beer gelato in a choux puff served in the sweets platter.

Last November, Hwe joined Clare – founder at Friday’s Garden, as well as many other local creatives at Friday’s & Friends Christmas Market, an annual Christmas pop-up hosted by Friday’s Garden. Last August, Gerald from a summer in t.br joined a long-time friend and ex-colleague, Lee – head chef at Lerouy for a one-night only four hands collaboration at the beautiful Modern French restaurant of Lerouy. The dinner welcomed over 24 guests in full seating, taking our guests through a 9-course Modern European menu with Asian influences.

In her first ever pop-up, Hwe joined friend and ex-colleague, JT for a three months dinner collaboration with Bar Stories – Singapore’s original artisanal cocktail bar at the eclectic Haji Lane. Named InsideOut, the pop-up showcased two different menus curated by each chef, with the first being a contemporary and refined izakaya concept – brainchild of JT; and the second being an 8-course omakase menu inspired by Hwe’s journey when she backpacked around Southeast Asia and across other continents.
Hwe’s menu took her guests on a delectable trip across Sicily, Laos, Hanoi and more – presenting dishes like arancini “fried rice balls, sicilian-style”, lemongrass chicken skewer “fun times in laos”, and charred pork patty, a reinvented bun cha “memories of hanoi” – amongst many other dishes.
Her time at Bar Stories was unforgettable, with the wonderful opportunity to meet and mingle with many bar guests and friends of a summer in hwe. An immense gratitude to Dave – co-founder & head mixologist at Bar Stories for the partnership and friendship, as well as to the entire Bar Stories team for the incredible support β€οΈβπ₯
